I love one-pot dishes, don't you? It's so nice to cook pasta with other ingredients, not just because it saves time and dirties less dishes, but because the flavorful cooking liquid infuses the pasta. My friends Cassie and Stephanie both raved about this Cheddar, Broccoli and Chicken Pasta Skillet and I couldn't wait to try it.
One thing we both loved about this was the chicken. It was perfectly cooked, very tender and juicy. SP asked me what I did differently and I told him that, unlike other one-pot recipes, you cook the chicken and then remove it from the pan, only adding it back in at the very end so it doesn't overcook. Sometimes I've questioned leaving chicken in the pan too long when I've made other recipes but I didn't think to make that change myself. I will from now on.
Baby Girl ate a huge bowl of this and proclaimed it super yummy. I found that my broccoli didn't cook through in only 5 minutes, so I've increased the time in the recipe below. I also misjudged the amount of cheddar I had on hand so I didn't have quite enough to actually taste it. But not to worry, this will definitely be made again and again so I've got time to get it right.
Cheddar, Broccoli and Chicken Pasta Skillet
As seen on Stephanie Cooks, originally from Center Cut Cook
1 pound chicken breasts, cut into 1 inch chunks
salt and pepper
2 tablespoons olive oil, divided
1 small onion, finely chopped
2 garlic cloves, chopped
1/2 teaspoon dried oregano
1/2 teaspoon red pepper flakes
8oz short-cut pasta
1 and 2/3 cup chicken stock
2 and 3/4 cups water, divided
8oz broccoli florets, chopped into small pieces
1/2 cup light cream
8oz cheddar cheese, shredded
1/2 teaspoon salt
1/2 teaspoon black pepper
Heat 1 tablespoon of oil in a very large skillet. Add the chicken chunks and cook until the chicken is browned on both sides, and almost entirely cooked through. Remove the chicken from the pan and set aside.
Add another tablespoon of olive oil to the pan. Cook the onions for several minutes, until they start to turn translucent. Add in the garlic and cook for another minute or two. Sprinkle in the oregano and red pepper flake.
Add the 1 and 2/3 cups chicken stock and 2 cups water. Stir in the pasta and bring to a boil. Cook for 10-13 minutes until most of the liquid is absorbed into the pasta.
Add the broccoli and 3/4 cups water; cover. Reduce the heat and simmer for about 10 minutes, or until the broccoli is tender.
Add in the cooked chicken, 1/2 cup light cream and cheddar cheese. Increase the heat to medium high. Continue stirring until the cheese melts and the sauce thickens, about 5-10 minutes. Season with salt and pepper, to taste.
The sauce will thicken as it stands.

Perfect Roast Chicken
I've been remiss. Ina's Perfect Roast Chicken has been my go-to recipe for roasting a chicken for years, but I recently realized I never blogged it. Craziness. I've made dozens of roast chickens during this blog's lifetime, I can't believe I never thought to photograph a single one.
I love to roast a chicken a couple times a month when it's super cold. And man has it been a cold winter so far. This recipe is fantastic - I love that the lemon and garlic flavor infuses into the chicken as it cooks. I started squeezing some of the lemon juice over the chicken before putting the pieces into the cavity and that imparts even more flavor.
This also makes an awesome gravy, which, of course, I didn't photograph. I love that my new stove has a continuous grate so the roasting pan sits evenly on top while I'm making the gravy. Note: the online recipe includes carrots and fennel, but they aren't in the cookbook version so I don't use them.
Perfect Roast Chicken with Gravy
Recipe from Ina Garten
1 (5 to 6 pound) roasting chicken
Kosher salt
Freshly ground black pepper
1 large bunch fresh thyme, plus 20 sprigs
1 head garlic, cut in half crosswise
1 lemon, halved
2 tablespoons butter, melted
1 large yellow onion, thickly sliced
1 cup chicken broth
2 tablespoons flour
Preheat the oven to 425 degrees.
Remove the chicken giblets. Liberally salt and pepper the inside of the chicken. Stuff the cavity with the bunch of thyme and the garlic. Squeeze the lemon all over the chicken, then add the halves to the cavity. Brush the outside of the chicken with the butter and sprinkle again with salt and pepper.
Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Place the onions in a roasting pan. Place the chicken on top.
Roast the chicken for 1 1/2 hours, or until the juices run clear when you cut between a leg and thigh. Remove the chicken to a platter and cover with aluminum foil for about 20 minutes while you make the gravy.
Pour the liquid from the bottom of the roasting pan into a fat separator. Leave the onions in the pan. Put the pan on the stove top and heat over medium-high heat, stirring the onions. Add the chicken broth and bring to a boil. Pour the liquid from the fat separator into the pan, leaving the fat behind. Mix the flour with the fat and stir into the chicken broth. This will thicken the gravy. Taste and add salt and pepper, as needed.
Slice the chicken and serve with the gravy,

Restaurant Knockoff - Stonefire Grill BBQ Chopped Salad
Have you guys heard of Stonefire Grill? They've got locations throughout Southern California. I've never been to one but the day we flew to the West coast for Thanksgiving my stepmom got one of their salads for us for dinner. She tossed it all in a big bowl and, to look at it, it looked like a regular old salad. In fact, I didn't even try any of it at first because there was other stuff to eat. But my sister-in-law kept raving about how good it was so I made myself a small bowl. And then another and another, unable to comprehend how such ordinary ingredients could come together into something so amazing.
I went online to see if anyone had tried to recreate the Stonefire Grill BBQ Chopped Salad at home. Lo and behold, someone did. I finally got around to putting it on the menu and all I can say is wow.
This recipe is pretty much spot-on. Which is great because we live in PA and don't get out to CA very often. Now I can enjoy this salad whenever I want.
Stonefire Grill BBQ Chopped Salad
As seen on Come Fly with Me
1/2 head iceberg lettuce, chopped
1/2 head romaine lettuce, chopped
1 cup black beans
3 ears fresh corn, cooked and corn kernels removed (or 1 cup frozen)
3/4 cup chopped red cabbage (I left this out)
1 medium carrot, shredded
1 cup shredded Monterey Jack cheese
1 large tomato, chopped
1 1/2 cups chopped cooked chicken, tossed with BBQ sauce
3 tablespoons green onions, chopped
3 tablespoons fresh cilantro, chopped
1 cup crumbled tortilla chips/strips
1 cup bottled ranch dressing
2-3 tablespoons bottled BBQ sauce, to taste
Fill a salad bowl with a mixture of chopped lettuces. Place the beans, corn, cabbage, carrots, cheese, and tomato in sections on top of the lettuce. Pile the chicken in the center. Sprinkle with green onions, cilantro and tortilla chips.
Combine the ranch dressing and BBQ sauce. Toss with the salad and serve.

Chopped Chicken Taco Salads with Cheese Quesadilla Strips
It's been awhile since we had a big, hearty salad for dinner. I had this Chopped Chicken Taco Salads with Cheese Quesadilla Strips recipe on my to-make list and I wanted something easy and quick for Halloween night, something that could sit if we had trick-or-treaters at the door.
We all loved this. I was especially in love with the cheese quesadillas, which is funny because they weren't anything extraordinary - just tortillas and cheese - but with the salad they were absolutely perfect. I'll definitely be making this one again and again.
Chopped Chicken Taco Salads with Cheese Quesadilla Strips
As seen on How Sweet It Is
2 teaspoons ground cumin
2 teaspoons smoked paprika
1/2 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon pepper
2 boneless, skinless chicken breasts
2 tablespoons olive oil
2 limes, juiced
2 garlic cloves, minced
Cooking spray
2 tortillas
4 ounces monterey jack cheese, freshly grated
2 romaine hearts, chopped
2 avocados, chopped
1 cup sweet corn
1/2 pint grape tomatoes, quartered
1/4 red onion, diced
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon olive olive
1/2 teaspoon red wine vinegar
1 lime, juiced
Combine the cumin, paprika, chili powder, salt and pepper in a bowl. Add the olive oil, lime juice and garlic. Mix thoroughly. Place the chicken in a large plastic food storage bag. Add the seasonings and coat the chicken evenly, then marinate in the fridge for 2-24 hours.
Heat a large skillet or grill pan over medium-heat heat. Cook the chicken for 5 minutes on one side, then flip and cook for another 4 minutes. Let cool for a few minutes and then cut into chunks.
While the chicken is cooling, add a tortilla to a large skillet coated with cooking spray. Brown on one side, then flip and add the grated cheese and the second tortilla on top. Cook until both sides are golden and cheese is melted, then remove from the skillet and slice into strips or triangles.
Combine the lettuce, tomatoes, avocado, corn and onion in a large bowl, then toss with the salt and pepper. Add olive oil, red wine vinegar and lime juice, tossing well to coat. Add in chicken and toss well, then separate into bowls. Add the quesadilla slices and serve.

Sponsored Post: Campbell's Dinner Sauces
This is a sponsored post. All opinions are my own.
Recently I was selected to try the new Campbell's Dinner Sauces. The tagline is "Make an awesome weeknight dinner in just 15 minutes" by browning meat, adding the sauce and serving over pasta or rice. I was excited to try it out.
I couldn't choose between the different flavors (the Campbell’s Skillet Sauces are available in Marsala, Toasted Sesame, Scampi and Thai Green Curry), so I asked SP which he preferred. He immediately chose the Thai green curry, which ended up being a good thing because when he went to the store to buy it that was the only flavor they had on the shelf. They've since added the rest of the line-up at our supermarket, however.
I wanted to make this a complete meal, so I opted to add some vegetables in with chicken and sauce. I chose potatoes, onions and zucchini, but you could also add mushrooms, green beans, squash, etc.
I was a little skeptical as I was cooking dinner, thinking the flavors would be watered down to be palatable to a wider audience, but we all enjoyed this. It had a nice kick and the green curry flavor really came through, but it wasn't too spicy for Baby Girl. I loved the addition of the veggies, although adding them in did take this from a 15 minute meal to a 30 minute meal.
Campbell's also has a line of slow cooker sauces: Tavern Style Pot Roast, Sweet Korean BBQ, Apple Bourbon BBQ, Hawaiian Luau, Mexican Red Chile Taco and Moroccan Spiced Stew. If I ever get myself a new slow cooker I'd love to try a few of those.
You can check out Campbell's Dinner Sauces on their website and on Facebook.
Thai Green Curry Chicken with Vegetables
4 small-medium Yukon gold potatoes, peeled and cut into chunks
1 tablespoon vegetable oil
1lb chicken breasts, cut into chunks
1 zucchini, cut into chunks
1 small onion, cut into chunks
1 pouch Campbell's Thai Green Curry sauce
rice, for serving
Boil the potatoes in salted water until just tender. Drain and set aside.
Heat the oil in a large non-stick skillet over medium-high heat. Add the chicken and cook until browned on all sides. Remove to a bowl and set aside. Add the zucchini and onion to the pan and cook until soft, about 5 minutes. Add the chicken back into the pan, along with the potatoes and green curry sauce. Simmer according to package directions.
Serve over rice.

Citrus Chicken Burritos with Cilantro Lime Rice
I've mentioned before that I love Mexican food and try to make sure each weekly menu has at least one Mexican dish on it. Recently I had trouble deciding between these knockoff Chipotle chicken burritos and these citrus chicken fajitas so I decided to combine them into one dish.
These were delicious, if time-consuming to make. I didn't realize how many different things I needed to prep - the pico de gallo, the marinade for the chicken, the caramelized onions, the cilantro lime rice and the refried beans I served on the side. Once all of that was done, assembling these was easy and dinner was on the table in no time flat. Just be sure you have time to prepare everything in advance.
I think these will be my go-to burritos from now on. I loved everything about them.
Citrus Chicken Burritos with Cilantro Lime Rice
From So Tasty, So Yummy and Very Culinary
Juice of half a lemon
Juice of one lime
Juice of one orange
2 tablespoons canola oil
1/4 teaspoon cumin
1/4 teaspoon salt
1/4 teaspoon black pepper
2 boneless skinless chicken breasts
1 tablespoon olive oil
1 onion, sliced
4 roma tomatoes, cored and diced small
1 cup finely diced red onion
1 jalapeño chile, seeded and minced (optional)
2 tablespoons fresh chopped cilantro
2 cups cooked basmati rice, warm (from 1 cup dry)
1 1/2 tablespoons lime juice
1 teaspoon vegetable oil
2 tablespoons fresh chopped cilantro
1/4 teaspoon salt
4 burrito-size tortillas
sour cream
guacamole
Put lemon, lime and orange juices in a plastic food storage bag with the oil, cumin, salt and pepper. Shake to combine. Add the chicken to the bag, seal and toss to coat. Marinate the chicken for 2 to 4 hours.
Heat the oil in a pan over medium heat, then add the sliced onion. Cook, stirring often, until the onions are brown and caramelized, about 30 minutes.
Combine the tomatoes, red onion, jalapeño (if using), and chopped cilantro. Season with salt and pepper to taste.
Drizzle the lime juice and oil over the top of warm rice, sprinkle with 2 tablespoons chopped cilantro and salt; fluff with a fork.
When ready to eat, grill the chicken breasts in a grill pan for 5 minutes over medium high heat. Flip and cook another 4 minutes. Allow to rest before slicing into strips.
Warm tortillas over a gas burner or in the microwave for about 15-30 seconds. Place on a flat surface, evenly distribute the rice and chicken, top with the pico de gallo, sour cream and guacamole. Fold the flap nearest you over the filling, then fold in the sides. Roll the burrito away from you, keeping it tight to form a log.

Tropical Chicken Kabobs
As summer winds down I've been thinking back to some of my favorite summer meals. One thing I loved this summer were skewers. My favorite was definitely the Bang Bang Chicken Skewers, but really you can thread some meat and veggies on skewers, grill them up and my family will devour them. These Tropical Pork Kabobs were no exception.
I rarely cook pork so the first thing I did was swap it out for chicken. I also prefer to keep each ingredient on its own skewer(s) since they have different cooking times. I goofed and forgot to defrost the chicken early enough to marinate it overnight, something I highly recommend so the flavors have time to really seep into the meat.
We all enjoyed this with couscous. There really is nothing like grilled meat and veggies in the summer.
Tropical Chicken Kabobs
As seen on The Barbee Housewife, from So Tasty, So Yummy
1/4 cup soy sauce
1/4 cup pineapple juice
1 tablespoon rice wine vinegar
2 cloves garlic, crushed
1 teaspoon chili garlic sauce
1 tablespoon brown sugar
1 lb. chicken breasts, cut in 1 inch cubes
1 pineapple or 1 20 oz. can, cut in 1 inch cubes
1 onion, cut in 1 inch cubes
1 zucchini, cut in 1/2 inch pieces
1 pint grape tomatoes
1/2 lb. whole button mushrooms
In a medium bowl, whisk together the soy sauce, pineapple juice, rice wine vinegar, garlic, chili garlic sauce, and brown sugar. Reserve 3 tablespoons of the marinade. Place the chicken and the marinade, in a plastic bag, keeping the reserved aside. Marinate overnight.
Pre-heat the grill. Skewer the chicken, pineapple, onion, zucchini, tomatoes and mushrooms. Place the skewers on the grill, baste with the reserved marinade every time you turn the skewers. Cook until the chicken is done, about 6 minutes per side. Let rest for 5 minutes before serving.

Homemade Chicken Nuggets with Honey Mustard Dipping Sauce
I was so in love with this meal I pushed it to the front of my queue so I could share it with you guys right away.
Chicken nuggets are usually thought of as kid food, but who doesn't love crispy, crunchy chicken? I can tell you it's always a hit in this house. And to toot my own horn a bit, I'm really good at frying chicken, at least boneless chicken. Juicy on the inside, crispy on the outside. I've been wanting to make homemade chicken nuggets and I searched for a good recipe for awhile before Our Best Bites published this one.
Yes, this isn't a healthy meal but there's just nothing like fried chicken, is there? You just don't get that same result with baking. Everything in moderation is my motto. The buttermilk and pickle juice marinade is key here. It imparted a delicious, subtly briny tang. I served the nuggets with cheesy zucchini rice, a side dish I always forget I love and kick myself for not making more often.
The homemade honey mustard was the perfect sauce for dipping. SP threw it together while I was finishing up the last batch of chicken and we all loved it. The original recipe calls for lemon juice but we didn't have any so we left it out and it was perfect as-is.
Homemade Chicken Nuggets
As seen on Our Best Bites
1 1/2 pound boneless skinless chicken breasts
3/4 cup dill pickle juice
3/4 cup buttermilk
Tabasco sauce (I didn't have any)
kosher salt
freshly ground black pepper
1 cup flour
1/2 teaspoon baking soda
1 tablespoon onion powder
1 1/2 teaspoons garlic powder
1 teaspoon paprika
2 eggs
1/4 cup water
2 cups panko
Canola, vegetable or peanut oil
Cut the chicken breasts into bite-sized pieces. In a gallon-sized food storage bag, combine pickle juice, buttermilk, and about 10 dashes of Tabasco sauce (if using, I didn't have any so I didn't use it and these were still amazing). Add the chicken and seal the bag, then refrigerate it for 1-4 hours.
When ready to cook, whisk together 1 teaspoon kosher salt, 1 teaspoon black pepper, the flour, baking soda, onion powder, garlic powder, and paprika in a large plastic food storage bag. In a shallow bowl, whisk together the eggs and water. Add the panko to a third shallow bowl. Begin heating about 2 inches of the oil in a heavy pot.
Place the chicken pieces into the flour and shake to coat. Roll the chicken in the egg, then roll to coat in the Panko. Repeat with remaining chicken pieces.
When the oil reaches 350 degrees, place 1/3 of the coated chicken pieces in the pan and cook, stirring gently and frequently, until golden brown (about 3-5 minutes). Drain the cooked chicken on a paper towel-lined plate and repeat with the remaining chicken. Serve immediately.
Honey Mustard Dipping Sauce
Modified from All Recipes
1/2 cup mayonnaise
2 tablespoons prepared yellow mustard
1 tablespoon Dijon mustard
2 tablespoons honey
Mix together in a bowl. Serve immediately or cover and chill.

Green Chile Chicken Tacos
People usually think of tacos as an easy weeknight meal. Not me. The filling might be easy but as I'm chopping up all the various toppings, filling bowl after bowl to put in the center of the dining room table, I find myself thinking "this is most certainly not an easy weeknight meal." Am I alone in this?
These Green Chile Chicken Tacos are worth it, though. The filling is certainly easy to put together - you're just chopping chicken, mixing with seasonings and cooking in a skillet before adding the green chiles. Simple. The toppings might take a bit more time to get together but they're all worth it. Even the lime wedges. I squeezed a bit of fresh lime juice over each of my tacos and it really brightens them up.
We all loved these. I increased the chicken to 1 1/2 pounds and it made enough for five tacos at dinner (although SP did overfill both of his tacos) and there was only enough leftover for two more tacos the next day. Baby Girl was, as she likes to say, a member of the clean plate club.
I can't wait to make this again, I'll just allow myself some more time for those pesky toppings.

As seen on So Tasty, So Yummy
2 tablespoons vegetable oil
1 1/2 teaspoons cumin
1 1/2 teaspoons garlic powder
1 1/2 teaspoons oregano
1/2 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 1/2 pounds boneless skinless chicken breasts, cut into cubes
4 ounce can chopped green chilies
taco shells/tortillas
shredded Monterey Jack cheese
shredded lettuce
diced tomatoes
guacamole
lime wedges
Whisk together the oil, cumin, garlic powder, oregano, salt and pepper in a medium bowl. Toss the chicken in the mixture to coat. Can be done in advance and refrigerated until ready to cook.
Heat a large non-stick pan over medium-high heat. Add the chicken, sauté for 3 to 5 minutes. Add the chilies and sauté for 3 to 5 minutes more. Reduce heat to low and simmer until ready to serve.
Warm the taco shells and fill each with cheese, then top with hot chicken, lettuce, tomatoes, guacamole and a squeeze of lime juice.

Smothered Italian Chicken
Sometimes I have a recipe on my radar but it takes seeing it raved about on another blog to push me to make it. I've had Stephanie's Smothered Italian Chicken saved for awhile but it wasn't until Christina made it that I remembered wanting to try it myself.
This was insanely delicious. A true winner all around and something I'd absolutely serve to company (who wants to come over so I have an excuse to make it again?) I made only a few modifications, mainly in how I coated the chicken - panko is my breading of choice these days - and how I cooked the tomatoes - using this method from my roasted tomato sandwiches/flatbreads.
Seriously, just look at that crispy panko. I'm salivating remembering how good it tasted, especially smothered in that amazing sauce. The freshness of the tomatoes and spinach balanced out the creaminess from the cooking creme. Such a fantastic combination of flavors. I only made half a pound of angel hair pasta and it was more than enough for three dinners and two lunches the next day. I love how much further pasta stretches these days.
Baby Girl ate her entire bowl (pictured above), even the spinach. All told she probably had 3/4 of a piece of chicken - she kept asking for more chicken after she finished what I had cut. For her to pick chicken over more pasta was pretty incredible. I guess there's just something about that crispy panko coating. So delicious. I cannot wait to make this one again.
Smothered Italian Chicken
Slightly modified from Stephanie Cooks
5 or 6 Roma tomatoes, cut into quarters
Olive oil
1 teaspoon Italian seasoning
Salt and pepper
2 eggs
1 1/2 cups panko breadcrumbs
1 teaspoon each Italian seasoning, garlic powder, onion powder
4 chicken breasts, cut in half lengthwise
Vegetable oil
3 cups baby spinach
1 tub Philadelphia Italian Cooking Creme
1/2 lb spaghetti or angel hair, cooked according to package directions
Preheat the oven to 400. Place tomatoes in a 9x13 baking dish. Drizzle with olive oil, add the Italian seasoning and season with salt and pepper. Toss to coat evenly. Bake for 30 minutes.
Meanwhile, crack eggs into a shallow dish and lightly scramble. Place panko in another shallow dish and season with the Italian seasoning, garlic and onion powders and some salt and pepper. Dredge the chicken in egg, coating both sides, then add to the panko, pressing to adhere.
Heat the vegetable oil (about 1/2 inch deep in a large non-stick skillet) over medium-high heat until shimmering. Fry the chicken in batches until crisp and cooked through, about 5 minutes per side. Remove from the heat, drain on paper towels and keep warm.
Remove the tomatoes from oven. Remove the skin, if desired, then add the spinach and cooking creme. Stir to combine then bake for another 15 minutes.
Smother the chicken with the sauce or toss the sauce with the pasta. Serve immediately over spaghetti or angel hair pasta.

Recipe Swap: Bang Bang Chicken Skewers
If you've ever been to a Bonefish Grill you've probably had their famous Bang Bang Shrimp, delicious fried shrimp coated in a creamy, spicy sauce. I've always wanted to try making them at home but I'm not a big fan of frying - it's messy and leaves the whole house smelling for days. For the grilling recipe swap I received Caroline's recipe for Bang Bang Chicken Skewers, a grilled knockoff version of the dish that uses chicken instead of shrimp (although if I'd had shrimp I would have used them, too).
In my opinion, the most important part of any make-at-home version of the Bang Bang Shrimp is the sauce. This was the perfect combination of creaminess from the mayo, sweetness from the chili sauce and spice from the sriracha. We both enjoyed the sauce mixed with smokiness from the grill.
We both love fried food as much as the next person, but this grilled version was pretty awesome. I think I may prefer it simply because of the fat and calories, not to mention the heaviness that comes with fried food. I felt like I could eat more of the chicken because it was grilled vs. fried. I can't wait to try this recipe with shrimp - I know it's going to be amazing.

Bang Bang Chicken Skewers
As seen on The Barbee Housewife, originally from Center Cut Cook
3-4 chicken breasts, cut into 1 inch chunks
1 red bell pepper, cut into 1 inch chunks
1 yellow onion, cut into 1 inch chunks
Olive oil, a few tablespoons for drizzling
Salt and pepper, to taste
1/4 cup mayonnaise
1/4 cup Thai sweet chili sauce
2 teaspoons sriracha, or more to taste
Soak wooden skewers for 30 minutes before using. You can also use metal skewers coated in cooking spray.
Thread the chicken, red bell pepper and onion onto the skewers (keep each thing separate since they have different cooking times). Drizzle the chicken and veggies with oil, then season with salt and pepper.
Whisk together the mayonnaise, Thai sweet chili sauce, and sriracha. Set aside.
Pre-heat your grill or grill pan to medium-high heat. Add the skewers. Cook the veggies for 6-8 minutes, or until tender, and the chicken 10-12 minutes, or until the meat registers at 165-170 degrees. During the last minute of cooking, brush the chicken with the sauce on all sides.
Remove the skewers from the grill and let rest a few minutes. Remove the chicken and veggies from the skewers before eating. Toss the chicken with the remaining sauce and serve alongside the veggies.

California Pizza Kitchen's Original BBQ Chicken Chopped Salad
You all know how much I love a good chopped salad. I've been trying to do one salad a week in the summer, so as soon as I saw this California Pizza Kitchen's Original BBQ Chicken Chopped Salad on Lauren's Latest Facebook page I knew I had to make it ASAP.
This is one awesome salad. Awesome. I loved everything about it - the tang of the red onion and BBQ sauce mixed with the cool creaminess of the ranch dressing and avocado. The basil (and I'm sure the cilantro, too, if I had remembered to ask SP to buy it) added complexity to the romaine. I love the pop of corn kernels in salad and the black beans were a great way to add protein and a slight creaminess. And you can never go wrong with fresh tomatoes this time of year. Everything came together beautifully and I wished the bowl had been twice as big.
I love that Baby Girl eats salad now. She snacked on all the ingredients as I was chopping them up and then chowed down on her portion. This was a great weeknight meal. I was able to grill the chicken during the day so I didn't even have to turn on the stove or dirty a pot/pan at dinnertime.
California Pizza Kitchen's Original BBQ Chicken Chopped Salad
Slightly modified from Lauren’s Latest
2-3 Romaine hearts, chopped
1/4 cup basil leaves, minced
1/4 cup chopped fresh cilantro
1 cup rinsed and drained black beans
1 cup drained sweet corn
2 tablespoons minced red onion
1 cup grated Monterey Jack or cheddar cheese
1/4-1/2 cup prepared ranch dressing, such as Hidden Valley
1 large tomato, diced
1 ripe avocado, sliced
2 leftover grilled chicken breasts, chilled and diced
1/4-1/2 cup prepared BBQ sauce*
In a large bowl, combine lettuce with the basil, cilantro, black beans, corn, red onion and cheese. Toss with ranch dressing (just enough to coat) and divide between serving bowls. Place diced tomatoes around the edges of each bowl, top with avocado slices and diced grilled chicken. Drizzle BBQ sauce over top the whole thing and serve.
*If you didn't grill your chicken with BBQ sauce, dice cooled chicken breast, toss in a little BBQ sauce, place on salad and drizzle with more sauce.

Chicken and Bacon Burgers with Fried Egg
I love a good chicken burger. My all-time favorite are these Chicken Burgers with Garlic-Rosemary Mayo, but I was looking for something a little different. I've had my eye on Elly's Chicken and Pancetta Burgers with Fried Egg for awhile, but I've been putting off making them until I planted my rosemary. I finally got that done recently so these went straight on the menu.
I decided to sub bacon for the pancetta because we always have bacon in the house. The flavors were a tad smokier but that was alright by me. I love the smell of fresh rosemary that permeates the whole burger - so good. And you can't go wrong topping anything with a fried egg. Such a decadent touch. SP opted to enjoy his without the egg but Baby Girl, a child after my own heart, was adamant about having an egg.
This is a messy sandwich but so, so good. The gooey cheese and the flavorful patty combined with the fried egg and peppery arugula made for a delicious sandwich. Baby Girl, sadly, wasn't a fan of the arugula (too spicy, she said) but polished off the rest of her burger. I'm already salivating thinking about the leftovers for lunch.
Oh and get used to seeing a photo that includes Baby Girl's portion. She's VERY big on being included on the blog right now and, really, how adorable is that?
Chicken and Bacon Burgers with Fried Egg
Slightly modified from Elly Says Opa, adapted from Nigel Slater’s The Kitchen Diaries
4 oz. bacon (or pancetta), diced
1 small onion, diced
2 cloves garlic, minced
2-3 sprigs fresh rosemary, minced
1 lb. ground chicken
Salt and pepper
4 slices provolone cheese
4 eggs
4 buns or rolls, split and toasted
Mayo
Arugula
Heat a skillet over medium heat. Add the bacon and cook until starting to brown at the edges. Add the onion, cooking until translucent. Add the garlic and rosemary. Continue cooking until the bacon is golden brown. Remove the mixture from the pan and set aside to cool for a few minutes.
Once cooled, add the mixture to the ground chicken, along with salt and pepper to taste. Lightly mix everything together and form into 4 patties. Let the patties sit for about half an hour on the counter, or for longer in the fridge.
Wipe out the skillet and place it over medium heat. Add the patties to the pan and cook for about 5 minutes, then flip and cook another 4 minutes. During the last minute, add a slice of cheese to each burger and let it melt. Remove the patties from the skillet.
Crack the eggs into another small skillet and cook to your liking.
To serve, Place a burger patty and a fried egg on each roll.

Chicken Quesadillas with Avocado Corn Salsa
Ever have one of those days where you're super excited to make dinner only to discover you're out of one of the main ingredients? In my case I was all set to make this Chopped Chicken Taco Salad with Cheese Quesadilla Strips when I discovered the bag of Romaine hearts I thought I had in the fridge was actually half a heart that I needed for another recipe anyway. Oops.
It ended up being a happy accident, though, because these Chicken Quesadillas with Avocado Corn Salsa were born. And that's a very, very good thing.
Really all I did was keep the recipe the same but instead of making it into a chopped salad I took the grilled chicken and added it to the quesadillas. Then I turned the rest of the salad ingredients into a corn, tomato and avocado salsa reminiscent of this grilled corn salad we all absolutely love. Win-win all around.
Once again Baby Girl asked if I'd photograph her plate, too. This kid, she kills me with the cuteness. Also note, see how she has one triangle of quesadilla on her plate? Yeah, she ended up loving these so much she ate one of my triangles and one of SP's for a total of 3 pieces (aka almost an entire quesadilla to herself). Must be a growth spurt coming on...
Chicken Quesadillas with Avocado Corn Salsa
Inspired by How Sweet It Is
2 tablespoons olive oil
2 limes, juiced
2 garlic cloves, minced
2 teaspoons ground cumin
2 teaspoons smoked paprika
1/2 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon pepper
2 chicken breasts, cut in half lengthwise and trimmed of fat
cooking spray
4 burrito-size tortillas
4 ounces Monterey Jack cheese, grated
4 ounces cheddar cheese, grated
1 avocado, peeled and diced
1 cup sweet corn
1/2 pint grape tomatoes, quartered
1/4 red onion, diced
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon olive olive
1 lime, juiced
The night before (or a few hours before) combine olive oil, lime juice, garlic, cumin, paprika, chili powder, salt and pepper in a large plastic food storage bag. Add chicken and toss to coat evenly. Marinate in the fridge for 2-24 hours.
Heat a grill pan over medium-heat heat. Add chicken and cook for 5 minutes, then flip and cook for another 4 minutes. Remove to a plate and let cool for a few minutes, then cut into chunks.
Spray a large non-stick skillet with cooking spray and heat over medium heat. Add a tortilla and cook both sides until they're spotty brown. Combine the shredded Monterey Jack and cheddar, then add 1/4th of the cheese and 1/4th of the chicken chunks. Fold the tortilla in half and cook until the cheese melts. Remove from the skillet and repeat with the remaining tortillas and chicken. Cut each quesadilla into triangles.
Combine the avocado, corn, tomatoes, and onion in a bowl, then toss with the salt and pepper. Add olive oil and lime juice, tossing well to coat. Season to taste and serve on top of the quesadillas.

Recipe Swap: Champagne Chicken Pasta
I didn't get carded when I bought the champagne for this recipe. I have to admit, I was a little bummed. Now granted, I'm more than a decade past being underage...but I digress.
When I got Caroline's blog for the last Blogger's Choice swap this Champagne Chicken Pasta was one of the finalists in the long list of recipes I wanted to make. I was really excited that she submitted it for the Cooking/Baking with Alcohol swap so I had an excuse to make it.
We all enjoyed this. I never think to use angel hair but it's one long pasta SP actually likes. The man doesn't enjoy spaghetti, I think he's crazy. The sauce is light and flavorful and it all comes together very quickly. Next time I'll add a bit more cheese to the chicken because I couldn't really taste it. I also subbed thyme for the tarragon because SP isn't a big fan of tarragon.
Initially I was worried about the price of the champagne, but the nice man at the liquor store steered me toward an inexpensive bottle. It worked well in the recipe but wasn't exactly drinkable, unfortunately. I'd look for some mid-range next time because you only need 1/2 - 1 cup so there's a lot leftover to drink and it was a shame to waste it. SP also thought a regular white wine would work well, although the name of the dish is champagne chicken pasta so I feel like champagne is kinda, sorta necessary.
I didn't realize this would only make enough for three portions plus some for Baby Girl, so double it if you want more leftovers.
Champagne Chicken Pasta
As seen on The Barbee Housewife
Serves 2-3
8 oz. pasta, angel hair or fettuccine
1/4 cup plus 2 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup Parmesan cheese, grated
2 chicken breasts, pounded to 1/2 inch thickness
2 tablespoons olive oil
2 tablespoons butter
1/2 lb. mushrooms, quartered
1/2 cup dry champagne
3/4 cup half and half
1/4 teaspoon red pepper flakes
1/4 teaspoon chopped fresh thyme
Cook the pasta according to package directions. Drain and set aside.
While the pasta is cooking, mix together the 1/4 cup flour, salt, pepper, and Parmesan in a shallow bowl or pie plate. Dredge the chicken in the mixture, until well coated.
Heat the olive oil and butter in a large non-stick skillet over medium-high heat. Brown the chicken on both sides, until cooked thoroughly. Remove the chicken to a plate and cover loosely to keep warm.
Add the mushrooms and 2 tablespoons of flour to the pan, sauteing for about a minute. Add the champagne and scrape up any browned bits. Reduce the sauce by half, then add the half and half, red pepper flakes, and thyme. Season to taste with salt and pepper.
Toss the pasta with the sauce. Slice the chicken into strips and serve over the pasta.

Pasta with Lemony Chicken and Asparagus
When you have a food blog you tend to be the one who does most of the cooking in your house. This works well for us - I work from home now but even when I was commuting to an office I was always home before SP. He is a fantastic cook, his first job was working in a restaurant, but his schedule has made it difficult for him to get in the kitchen these last few years. Recently he asked me to make it possible for him to cook one meal on a weekend (usually Sunday). He spent a lot of time looking through my back issues of Cook's Country before choosing this recipe for Pasta with Lemony Chicken and Asparagus.
As agreed, I stayed out of the kitchen and let him do his thing. Baby Girl helped trim the asparagus (she loves snapping off the woody ends) and I consulted when he had any questions but this meal was entirely his. And it was fantastic, light and flavorful with the brightness of the lemon and the kick from the garlic. The asparagus were perfect - not to thin and not to thick, cooked until tender but not mushy. The chicken was nicely browned and we both loved the campanelle pasta even if it was almost twice the price of our usual store brand. I can't say enough good things about this meal. Even the leftovers were awesome.
The original recipe calls for 4 chicken breasts (1 1/2 lbs) and only half a pound of pasta. I convinced SP to cut it down to 3 chicken breasts and it was still a lot of chicken. I'm modifying the recipe to only 2 chicken breasts. I also think a bunch of asparagus is less than a pound (we didn't weigh it) so you might want to buy two bunches - you can never have too much asparagus.
I can't wait to see what he'll make next!
Pasta with Lemony Chicken and Asparagus
Cook's Country Magazine April/May 2008
8 ounces campanelle pasta
Salt and pepper
2 boneless, skinless chicken breasts, cut into 1/4"-thick slices
4 tablespoons unsalted butter
1 pound asparagus, trimmed and cut into 1" pieces
8 garlic cloves, minced
1/4 fresh squeezed lemon juice
1 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
Bring water to a boil in a large pot. Add 1 tablespoon salt and pasta to boiling water and cook according to package directions. Drain and reserve 1/2 cup of the pasta cooking water. Return pasta to the pot and set aside.
Pat chicken dry with paper towels and season with salt and pepper. Melt 1 tablespoon butter in a large non-stick skillet over medium-high heat. Cook half the chicken until golden brown, about 1-2 minutes per side. Remove to a plate and repeat with another tablespoon of butter and the remaining chicken.
Add 1 tablespoon of butter to the now-empty pan and add the asparagus. Cook until tender, about 5 minutes, then add the garlic and cook until fragrant, about 30 seconds.
Add the remaining 1 tablespoon of butter, chicken, asparagus, lemon juice, cheese and parsley to the pot with the pasta and toss to combine, adding the 1/2 cup of pasta cooking water as needed to make a sauce. Taste and season with salt and pepper, if needed, then serve.

Herb Grilled Chicken with Creamy Broccoli Orzo
I recently bought broccoli crowns that I ended up not cooking, so when Tara posted this recipe for Herb Grilled Chicken with Creamy Broccoli Orzo it sounded like a great way to use them up. It was also perfect because I've had half a box of orzo lurking in my pantry forever.
As I was reading over the recipe I realized two things - (1) a full pound of orzo would make way too many leftovers and (2) there's no mention of cooking the broccoli before adding it to the orzo so I decided to cook it with the tomatoes before tossing everything together.
The result was amazing. This was a great dish, light from the substitution of Greek yogurt for heavy cream and bright, fresh flavors. I don't know why I don't cook with orzo more often. Baby Girl absolutely loved this, practically shoveling the orzo and chicken into her mouth. A winner all around.
Herb Grilled Chicken with Creamy Broccoli Orzo
As seen on Smells Like Home
8 oz orzo (rice-shaped pasta)
Extra-virgin olive oil
1 1/2 lbs boneless skinless chicken breasts, cut in half lengthwise
2 teaspoons herbes de Provence
Kosher salt and freshly ground black pepper
2 tablespoon extra-virgin olive oil
1 large shallot, finely chopped
2 cloves garlic, minced
1/2 cup low-sodium chicken broth
1 (14.5 oz) can diced tomatoes, undrained
2 cups fresh broccoli florets
6 oz plain fat-free or low-fat Greek yogurt
1/4 cup heavy cream
3/4 cup freshly grated Parmesan plus extra for sprinkling
Kosher salt and freshly ground black pepper
Cook orzo according to package directions. Drain and set aside.
Drizzle the olive oil over the chicken and season with herbes de Provence, salt and pepper; set aside.
Heat a grill or grill pan over medium-high heat.
While the grill heats and right after you drop the orzo in the water, heat the 2 tablespoons of oil in a heavy large skillet over medium heat. Add the shallot and garlic, and saute until tender and fragrant, about 1 1/2 minutes. Add the broth and tomatoes and scrape any bits off the bottom of the pan. Simmer the tomatoes for 2 minutes, then add the broccoli. Cook until broccoli is tender, about 8-10 minutes, stirring occasionally.
Start grilling the chicken while the broccoli cooks, turning after 4-5 minutes and grilling for another 3-4 minutes. Remove the chicken from the grill and allow to rest for 5 minutes, then cut into slices.
Stir the yogurt and cream into the tomato and broccoli mixture. Add the drained orzo and toss to coat. Remove the skillet from the heat. Add the Parmesan and toss until the sauce coats the pasta thickly. Season the orzo with salt and pepper to taste. Sprinkle on extra Parmesan, if desired. Serve with the grilled chicken.

Recipe Swap: Cowgirl Chicken Sandwich
It's Blogger's Choice recipe swap time again and this round I was assigned Ali's blog, Sparks From the Kitchen. I spent a lot of time looking through her blog before deciding on this Cowgirl Chicken Sandwich. I've been on a serious sandwich kick lately, eating one at least once a week, and SP was just asking me to make something with BBQ sauce.
I wanted to add a few toppings to the sandwich so I mashed up an avocado with a little lemon juice, salt and pepper and added crispy Romaine and sliced tomato. Baby Girl loved this sandwich, making all kinds of happy noises while she was eating. SP and I liked it, too, although I forgot to add additional BBQ sauce to our sandwiches and we both thought they needed it for that extra kick. It's a simple sandwich that tastes great.
Cowgirl Chicken Sandwich
As seen on Sparks From the Kitchen
2 large chicken breasts, cut in half lengthwise
Salt and pepper
Olive oil
8 pieces cooked bacon
Cheddar cheese, sliced thin
BBQ sauce
Kaiser rolls
1 avocado
Juice of half a lemon
Romaine lettuce
Sliced tomato
Preheat grill pan or grill over medium high heat.
Season the chicken on both sides with salt and pepper and drizzle with olive oil. Add to the grill and cook 4-5 minutes on the first side, the flip and cook 3 minutes on the other side. Brush chicken with the BBQ sauce and then add the cheese. Turn off the heat and tent loosely with foil to melt the cheese.
Cut the avocado in half, remove the pit and scoop the flesh into a bowl. Mash the avocado with the lemon juice and season with salt and pepper, to taste.
Split the rolls in half. Put some of the mashed avocado on the top half of each roll. Place a little sauce on the bottom piece of bread, top with chicken, bacon slices, lettuce and tomato. Add the top piece of bread and serve.

Grilled Chicken Caesar Flatbreads
You all know how much I love my friend Cassie's blog. She and I have a very similar cooking style and I know I can always rely on her for easy weeknight meals. I was making my meal plan recently and struggling to find a sandwich so I went to her blog and clicked on the sandwich tag. Voila! Up popped these Grilled Chicken Caesar Flatbreads. Chicken + Caesar dressing + flatbreads = deliciousness.
These really could not be simpler and the flavors are great. You're basically topping a flatbread with chicken Caesar salad. I got to use my new grill pan, although I need to remember that it's easier to slice chicken in half lengthwise when grilling so you aren't standing there waiting (im)patiently for the chicken to cook.
Baby Girl continues to amaze me with what she eats - she cleaned her plate (she had one quarter of a flatbread topped with the chicken and salad). I can't wait to make this one again.

2 boneless skinless chicken breasts
3/4 cup Caesar dressing, plus more for the salad
Juice of 1 lemon
1 tablespoon Worcestershire sauce
Chopped romaine lettuce
Parmesan cheese
Butter
6 flatbreads
Slice each chicken breast in half lengthwise. Combine dressing, lemon juice, and Worcestershire in a plastic food storage bag. Add chicken and toss to coat. Marinate at least 2 hours, up to overnight.
Heat grill or grill pan to medium-high heat and grill chicken until cooked through. Remove chicken to a plate and allow to rest, then slice. Butter both sides of the flatbreads and add to the grill/grill pan, turning occasionally until each side until marked and slightly crispy.
Combine romaine lettuce, Caesar dressing, and Parmesan cheese. Add some of the salad mixture to each flatbread. Top with sliced chicken and more grated cheese. Serve immediately.

Recipe Swap: Chicken Suiza Pockets
Chicken was the theme for the latest recipe swap. It's such a versatile meat but like most people I get into a rut making the same chicken dishes over and over again. I was excited when I was assigned these Chicken Suiza Pockets from Jenna. We love Mexican food and these seemed simple yet different from anything I've made before.
I didn't read the recipe ahead of time so I didn't realize it called for mixing the chicken and other ingredients in a stand mixer to shred the chicken. While I really want to try this tip, I didn't feel like dragging my stand mixer out of the garage when I could just shred the chicken by hand and mix it with the other ingredients.
I ended up cooking the chicken and mixing up the filling a few days before I made this recipe due to a change in dinner plans. The next day I needed a quick lunch so I snagged some of the filling and made a quesadilla. It was good so I was really looking forward to dinner the next night.
Unfortunately I had some issues getting my crescent rolls to stick together. The perforated lines didn't want to cooperate and I only managed to get three pockets made, which was fine because that fed us all for dinner. Baby Girl was a big fan, eating half a pocket in addition to the salad I served on the side. These were good and I liked the concept but I think a different rolled dough would make it easier.
Chicken Suiza Pockets
As seen on Jenna’s Cooking Journey, originally from Cassie Craves
2 small chicken breasts
1 can Rotel (diced tomatoes with green chiles)
5 ounces cream cheese, softened
1/2 cup salsa verde
1 tablespoons honey
Juice of 1 lemon
1/2 teaspoon cumin
Salt and pepper to taste
1/2 cup shredded Mexican Blend cheese
2 packages crescent rolls
Cilantro, chopped
Preheat the oven to 375.
Put chicken breasts and Rotel in a glass baking dish and bake until the chicken is done, about 35 minutes.
Place the chicken breasts, 3 tablespoons of the Rotel and all the other ingredients except the crescent rolls and the cilantro into a standing mixer. Turn on low and mix until all the ingredients are combined (this will shred your chicken and combine all the ingredients). Alternatively, you can shred the chicken and mix with the other ingredients in a large bowl.
Divide each pack of crescent rolls into 4 rectangles by sealing together two triangles of dough. Divide the filling evenly among the 8 rectangles. Seal by pinching the dough up and into the middle. Bake 20 minutes.
Top with cilantro, if desired.
